SPOOKY, BUT GOOD FOR YA, SNACKS FOR POST-RUN

Something a little bit different for this edition of Ultramag!

It’s spooky season! Halloween is this Monday, and we know some of you don’t take to the day – and that’s okay! Others, like myself, like to have a little bit of fun on October 31 so I’d thought I’d provide some choice post-run snacks that are high in protein so you can hit stop on those lolly cravings after the kids have gone trick or treating!

 

MINI MUMMY CAULIFLOWER CRUST PIZZA


Makes six servings
Prep time: 15 minutes
Cook time: 55 minutes

Ingredients

Crust
2 ½ cups shredded cauliflower
1 egg or flax egg
1/3 cup goat cheese
2 tsp Italian seasoning

Toppings
6 slices organic or non-dairy cheese (slices work best for the mummy look)
12 black and/or green olives
170g low-sugar pizza sauce

Directions
Preheat oven to 180
Soak up excess water from cauliflower and place the cauliflower in a bowl
Add the remaining crust ingredients to the bowl and mix well with a spoon or spatula
Line a large pan (or two medium-sized pans) with parchment paper
Divide the cauliflower mixture into six equal-sized balls, place on the parchment, and roll out to your desired thickness
Place the mini crusts in the oven and bake for 40 to 45 minutes, or until crisp but not brown
While the crusts are baking, slice the cheese into strips and slice olives
Add toppings to the crust and cook in the oven for another five to 10 minutes

BLOOD AND GREENS SMOOTHIE


Makes one serving

Prep time: 5 minutes

Ingredients
1 cooked beat (or beet powder)
1 cup mixed berries
1 cup coconut water
1 tbs maple syrup
1 cup spinach
1/2 tsp cinnamon
1/2 lime juiced (optional)
1 scoop vanilla protein powder (optional)

Directions
BLEND!

 

PUMPKIN SHAPED DEVILED EGGS


Makes however many you like!
Prep time: 5 minutes

Ingredients
Hard boiled eggs
Yellow mustard
Mayonnaise
Salt and pepper to taste
Chopped chives
Paprika

Directions
Prepare eggs to the boil and then cut lengthwise
To make the deviled egg filling, scoop out boiled yolks and place them in a separate bowl; add mustard, mayonnaise, salt and pepper, mash and mix with a fork
Scoop yolk mixture and roll into an empty egg white
With a fork or knife, make 304 indents to the yolk mixture to make them look like pumpkins
Top each egg with a small piece of chive
Sprinkle with paprika for extra zing
